Making Italian Sausage

  • 1/4 cup Italian sausage seasoning blend (adjust according to taste)
  • 1/4 cup ice water (to help distribute the seasoning)
  • Optional: 1/4 cup red wine vinegar for added tanginess

Instructions:

  1. Season the Meat: In a large mixing bowl, combine the ground pork with the Italian sausage seasoning blend. If using, add the red wine vinegar. Mix well to ensure the seasoning is evenly distributed throughout the meat.
  2. Add Ice Water: Gradually add the ice water to the meat mixture, continuing to mix until the ingredients are well combined and the mixture is sticky. This helps the fat and proteins bind together, improving the texture of the sausage.
  3. Test the Flavor: Before proceeding, cook a small portion of the meat mixture in a skillet to test the seasoning. Adjust the seasoning blend or salt to taste if necessary.
